Chai Latte Scones


Several years ago, I worked in a coffee shop that had the most delicious scones I’ve ever tried. When I was making them, I would always play around with the recipe and see what new flavors I could create. There were some duds (pineapple vanilla wasn’t the hugest hit among the customers, but my boss loved them), and there were also some masterpieces. These chai latte scones are the latter. They’re not too sweet, and are as flaky as pie crust.

  • 1/2 cup butter
  • 1/4 brown sugar
  • 1 egg
  • 2 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp each of ginger,
  • allspice, cardamom,
  • cinnamon, cloves,
  • nutmeg, and salt.
  • 1/2 cup of milk

Cream together butter, brown sugar, and egg. Once smooth, add in flour, baking powder, and spices. Pour in the milk and mix until just holding together.

Place on a floured surface and shape in to a ball. Flatten with your hand or a rolling pin until they’re about one inch high. Cut in to either six or eight triangles. Spray baking pan with cooking spray, and bake for 12 to 15 minutes at 400 degrees F.

Note: I use the base for nearly every type of scones I make (and I make a lot of scones). If you use different spices and add in different fruits or flavors it turns out quite nice as well.
